As you know, green tea and black tea came from the same plant which is Camellia Sinensis. What differs one from another is the processing method, the soil and climate where it was grown.The processing of green tea is so minimal retaining its original polyphenols. Hence, green tea contains the highest level of polyphenols. Black tea, on the other hand, are allowed to oxidize and it undergoes an extensive processing which includes fermentation producing a dark brown or reddish color. Consequently, this same process destroys the important compound called polyphenols which are present in the freshly plucked leaves.
